  • 4 spring onions, trimmed, halved lengthways and crossways
  • 3 cloves garlic, sliced
  • 1 carrot, peeled, cut diagonally into 5mm-thick slices
  • 750grams Woolworths skinless chicken thigh cutlets
  • 2tablespoons salt-reduced soy sauce
  • 2tablespoons mirin seasoning
  • 1 bunch broccolini, halved lengthways and crossways

  • 1/4 bunch coriander, leaves picked
  • 2tablespoons fried shallots

Description

Turn up the flavour with this slow-cooked chicken miso soup recipe. Miso, soy and mirin add depth, while chicken and veggies provide old-fashioned goodness.

Method

Step 1 of 3

Place miso, onion, garlic, carrot and 1.5L water in a 5.5L slow cooker. Stir to combine. Add chicken, cover with lid and cook on low for 4 hours or until is chicken is tender and cooked through. Turn off slow cooker.

Tip:

Method without a slow cooker: place ingredients in a large heavy-based saucepan and stir to combine. Bring to the boil over medium-high heat, then reduce heat to medium. Simmer, covered, for 30 minutes or until vegetables are tender and chicken is cooked through. Continue with steps 2 and 3 using saucepan instead of slow cooker.

Step 2 of 3

Using tongs, remove chicken from slow cooker and place on a board. Remove and discard bones. Shred meat. Using a slotted spoon, remove and discard onion and garlic.

Step 3 of 3

Return chicken to slow cooker and add soy, mirin and broccolini. Cover with lid and cook for 3 minutes or until broccolini is just tender. Ladle soup into bowls. Serve topped with coriander and shallots.
