- 4 spring onions, trimmed, halved lengthways and crossways
- 3 cloves garlic, sliced
- 1 carrot, peeled, cut diagonally into 5mm-thick slices
- 750grams Woolworths skinless chicken thigh cutlets
- 2tablespoons salt-reduced soy sauce
- 2tablespoons mirin seasoning
- 1 bunch broccolini, halved lengthways and crosswaysingredient tipTipInstead of broccolini, you can use leafy green veg, such as broccoli, pak choy or choy sum.
- 1/4 bunch coriander, leaves picked
- 2tablespoons fried shallots

Step 1 of 3
Method without a slow cooker: place ingredients in a large heavy-based saucepan and stir to combine. Bring to the boil over medium-high heat, then reduce heat to medium. Simmer, covered, for 30 minutes or until vegetables are tender and chicken is cooked through. Continue with steps 2 and 3 using saucepan instead of slow cooker.
