- 2 large zucchini, diced
- 2 red capsicum, diced
- 1 brown onion, diced
- 5-6 cloves garlic, diced
- 3tablespoons olive oil
- 1 tin diced tomato
- 1 tin small tomato paste
- 3-4tablespoons moroccan seasoning ( add to your desired taste)
- 6 eggs
- 1 handful parsley, chopped
- 1 pinch salt (to taste)
- 1 pinch pepper (to taste)
Description
Easy vegetarian shakshuka, great as a side or on its own.
Instruction tip
Serve on top of buttered Turkish bread with a side of salad and protein if desired.
Method
Step 1 of 6
Pre-heat oven to 180°C.
Step 2 of 6
Combine zucchini, capsicum, onion and garlic in a sheet pan or large rectangular oven proof dish, drizzle with olive oil and toss to coat.
Step 3 of 6
In a mixing bowl, combine tinned tomato, tomato paste and Moroccan seasoning. Stir to combine then pour over veggie mix and toss to coat well.

Roast in oven for 35 mins then remove from oven.
Step 5 of 6
Using the back of a spoon, make 6 evenly spaced dents in your veggie mix. Break 1 egg into each dent, sprinkle with salt and pepper
Step 6 of 6
Return to oven for 7-10 mins or until eggs are cooked as desired. Remove from oven and sprinkle a little parsley on top.
