  • 2 chorizo, sliced
  • 2 capsicums, deseeded cut into strips
  • 1 sprigs coriander
  • 1 large organic brown onion, chopped
  • 1/4teaspoons cayenne pepper
  • 2teaspoons ground cumin
  • 1teaspoons sweet paprika
  • 2tablespoons organic olive oil
  • 6 organic free-range eggs
  • 700milliliter organic passata
  • 1 Turkish bread (to serve)

Method

Step 1 of 3

Preheat oven to 180°C. Heat oil in a large deep frying pan over medium heat. Add onion and capsicum and chorizo. Cook, stirring occasionally, for 8 minutes or until softened. Add garlic and spices and cook for 2 minutes.

Pour passata into the pan over veg and bring mixture to the boil. Crack eggs into the mixture. Season with salt and pepper. Transfer to the oven and bake for 20 minutes or until egg whites are just cooked. Serve with toast and topped with coriander.
