- 1 green capsicum, sliced
- 1 red capsicum, sliced
- 1 orange capsicum, sliced
- 150grams Greek yoghurt
- 3tablespoons mint leaves, chopped
- 2 cloves garlic, crushed
- 1 red chilli, deseeded and finely chopped
- 400grams tomatoes, chopped
- 1 pinch caster sugar
- 4 eggs
- 3tablespoons coriander leaves, roughly chopped

Description
This dish, known as “menemen” in Turkey, is spicy and utterly moreish. Add more chilli if you like it hot.
Method
Step 1 of 5
Heat the oil in a large, non-stick frying pan over a medium heat and cook the onion for 5 minutes. Add the capsicums to the pan and cook for 20 minutes, stirring occasionally.
Step 2 of 5
Meanwhile, place the yoghurt, mint, and garlic in a small serving bowl and stir together. Cover and set aside.
Step 3 of 5
Add the chilli, tomatoes, and sugar to the frying pan, season well, and cook for 10 minutes.
Step 4 of 5
Make 4 hollows in the tomato mixture and crack an egg into each. Cover the pan and cook for 5-10 minutes, or until the eggs are cooked to your liking.
Step 5 of 5
Sprinkle the dish with the coriander and serve with the herb and garlic yoghurt.
