  • 3tablespoons castor sugar (for sprinkling on top)
  • 1teaspoons vanilla essence

Description

A classic light recipe for Savoiardi that are great for dunking.

Method

Step 1 of 5

Preheat oven to 200°C. Line 2 baking trays with baking paper. Transfer the mixture into a piping bag and pipe out onto the baking tray, sprinkle castor sugar on top and bake for 10 mins or until golden brown.

Step 2 of 5

Place egg whites in mixing bowl and beat on high speed until soft peaks form. Then add 2 tablespoons of sugar and continue to beat until you get a smooth and glossy consistency.

Step 3 of 5

Place egg whites in a bowl and set aside. In a mixing bowl place egg yolks, adding remaining sugar and vanilla essence. Beat until thick and pale in colour. Set aside.

Step 4 of 5

In a bowl sift plain flour and baking powder and set aside.

Step 5 of 5

Fold half of the egg whites with the egg yolk mixture. Then fold in flour and then the remaining egg whites. Allow to completely cool on wire rack and enjoy.
