- 1 1/2 cup plain flour (plus extra, to dust and 1/4 cup plain flour)
- 125grams unsalted butter, chopped
- 1 orange, rind finely grated
- 500grams mixed berries
- 300milliliter thickened cream, whipped (to serve)
- 1 egg, lightly whisked
- 1tablespoons caster sugar (and 1/4 cup caster sugar, plus 2 tsp extra, to sprinkle)

Method
Step 1 of 5
Place flour, sugar and 1/2 tsp salt into a food processor and pulse to combine. Add butter and process until finely chopped. Add egg yolk and, with motor running, add about 1 tbs iced water to just bring the dough together.

Transfer to a lightly floured benchtop and knead gently until smooth. Wrap in plastic wrap and chill for 30 minutes. When ready to use, allow pastry to soften for 10 minutes before rolling.

Preheat oven to 200°C. Roll out pastry on a large sheet of baking paper to a 35cm circle, 5mm thick.
Step 4 of 5
Combine berries with sugar, flour and orange rind. Pile into the centre of the pastry, leaving a 5cm border. Fold edges of pastry over the berries, leaving the centre open. Brush pastry with egg and sprinkle with extra sugar. Chill for 10 minutes.
Step 5 of 5
Bake for 25 minutes or until pastry is golden and juices are bubbling. Serve with whipped cream.
