Method
Step 1 of 5
Peel and chop 800g potatoes and boil until tender. Mash with 30g butter. Cool.
Step 2 of 5
Drain a can of red salmon or tuna, flake and add to potato with chopped parsley, 1 egg and grated lemon rind. Season with salt and pepper.
Step 3 of 5
Shape into rounds and coat in plain flour, beaten egg and dry breadcrumbs.
Step 4 of 5
Fry until golden.
Step 5 of 5
Serve with lemon wedges.
