  • 200grams cooked or raw chicken breast, diced
  • 1 cup cooked or raw mushrooms, sliced
  • 2tablespoons passata (optional)
  • 1teaspoons garlic (optional)
  • 200milliliter cream
  • 4 medium vol au vent cases
  • 1 bacon rasher

Description

I used leftover chicken breast and mushroom but you can use fresh. It just takes a bit longer
Instruction tip
As I use cooked chicken I leave it in the cream (off the heat) for at least 30 minutes before reheating and serving to allow the chicken to absorb some of the cream. It stops the chicken being dry.

Method

Step 1 of 4

Dice chicken, (cook for a few minutes if required, set aside) Cook mushrooms ( if required)

Step 2 of 4

Dice bacon and cook for about 4 mins until all fat is rendered Add passata

Step 3 of 4

Add cooked chicken and mushroom to pan. Add cream. Simmer for about 10 minutes until cream is reduced (I like to take it further so the cream splits)

Step 4 of 4

Heat Vol au vents in the oven for about 5 minutes. Fill with chicken mixture (and a bit extra). Sprinkle with parsley. They are great served with salad
