  • 1/2teaspoons Chinese five spice powder
  • 1 cup plum jam, warmed
  • 1/4teaspoons ground white pepper
  • 2teaspoons ground coriander
  • 1teaspoons ground ginger
  • 1/2teaspoons dried chilli flakes
  • 3teaspoons ground cumin
  • 1/3 cup brown sugar, firmly packed
  • 1teaspoons sea salt flakes
  • 1 1/2teaspoons plain flour
  • 20grams butter, soft
  • broccolini, steamed (to serve)
  • 1 cup chicken stock
  • 2kilograms rolled boneless pork shoulder

Description

With plum jam, ginger, Chinese five-spice and chilli flakes, this roast pork shoulder with a sticky spiced crust is the perfect mix of sweet and spicy.

Method

Step 1 of 5

Preheat oven to 180°C. Line a deep roasting pan with baking paper. Place pork in prepared pan.

Step 2 of 5

Combine jam, sugar, spices, sea salt flakes and white pepper in a bowl. Spread glaze mixture thickly over pork and netting.

Step 3 of 5

Pour stock into pan around pork. Cover pork loosely with foil. Roast for 2 hours or until pork is cooked through when tested with a skewer.

Transfer pork to a chopping board. Remove netting. Remove baking paper from pan and discard, reserving pan juices.

Step 5 of 5

Combine butter and flour in a small bowl to make a paste. Place roasting pan with pan juices on the stove over medium heat. Bring to the boil. Add butter mixture and whisk until combined and sauce thickens slightly. Slice pork and serve with sauce and broccolini.
