  • 2tablespoons harissa paste
  • 2 cloves garlic, peeled and minced
  • 1/2 bunch coriander, fresh, chopped

Description

These tender roasted whole eggplants are packed with flavour from harissa and creamy feta.

Method

Step 1 of 2

Pre-heat the oven to 200°C/180°C fan-forced. Brush the eggplants with oil, prick with a fork and place on a baking tray. Roast for 40-45 minutes until tender.

Step 2 of 2

Melt the butter in a pan and add the harissa and garlic. Slice the eggplants open, pour in the harissa butter, top with fresh coriander and feta and serve.
