- 250grams leftover roast chicken, roughly diced, skin and bones removed
- 8 large eggs, lightly beaten
- 100grams parmesan, grated
- 125grams brie, chopped
- 150grams small potatoes, washed and diced
- 100grams spanish onion-peeled and diced
- 2 cloves garlic, minced and peeled
- 1packets frozen spinach
- 1/3 bunch fresh basil, rough chopped
- 2 medium carrots, peeled and small diced
- 1/4teaspoons sea salt (or to taste)
- 1/4teaspoons black pepper (or to taste)
- 2tablespoons olive oil
Description
A great family dinner that you can use up your leftover Woolworths Roast Chicken!
Method
Step 1 of 4
Put the oil in a pan, gently sauté the garlic, onion, potato and carrot till softened and slightly caramelised, Stir through Spinach and cook a further 2 mins or so until u can break it apart in the pan. Preheat oven to 160C fan forced or 170C normal.
Step 2 of 4
In a large bowl, throw in the eggs, seasoning, chicken, and the cooked vegetables
Step 3 of 4
Stir through the basil, the parmesan and brie, till all combined.
Step 4 of 4
Pour into a greased spring form pan and place it in preheated oven till golden and set, approximately 30 minutes.
