For the crust
- 50grams macadamia nuts, crushed
- 50grams butter
- 150grams breadcrumbs
- 700grams chicken breasts, diced
- 1 medium celery, peeled and chopped
- 1 medium leek, peeled and chopped
- 1 medium white onion, peeled and chopped
- 3 cloves garlic, peeled and chopped
- 2 cups white sauce
- 4tablespoons olive oil
- 1/3 cup cream

Description
This indulgent creamy chicken bake recipe has an added nuttiness to excite the palette
Method
Step 1 of 5
Pre-heat the oven to 180°C. Add the butter, breadcrumbs and macadamia nuts to a pan and fry up for 2 minutes on a medium heat while stirring.
Step 2 of 5
Remove from the pan and set to one side. Now pan fry the vegetables in the olive oil while tossing for 4 minutes.
Step 3 of 5
Now add the chicken and cook for a further 6 minutes. Now add the sauce and cream and allow to simmer while stirring for 8 minutes so the sauce can reduce and thicken.
Step 4 of 5
Remove from the heat and empty the contents into a deep baking tray and layer the breadcrumb mix on top.
Step 5 of 5
Roast in the oven for 20 minutes and then remove from heat. Allow to cool slightly before serving.
