- 200grams chicken mince
- 2tablespoons dried breadcrumbs
- 1 free range egg
- 1 carrot, grated
- 1 clove garlic, crushed
- 5milliliter extra virgin olive oil cooking spray
- 2 vine-ripened tomatoes, chopped
- 1/3 cup chopped parsley

Description
These soft and flavourful patties feature quinoa, chicken mince and grated carrot, and they're delicious when enjoyed alongside fresh fruit, cheese and veggie slices.
Method
Step 1 of 4
Cook quinoa in a small saucepan of boiling water for 10 minutes or until tender. Drain, then refresh under cold water. Drain well.
Step 2 of 4
Combine quinoa, chicken, breadcrumbs, egg, carrot and garlic in a large bowl. Shape into 8 small patties. Place on a plate, cover and refrigerate for 15 minutes.
Step 3 of 4
Spray patties with oil. Heat a large non-stick frying pan over medium-high heat. Cook patties, in batches, for 3 minutes each side or until cooked through and golden-brown.
Step 4 of 4
To make tomato salsa, place tomato, parsley, cucumber and onion in a bowl. Stir to combine. Serve patties in lunch boxes with tomato salsa, pear and cheese.
