- 2 Nana Premium wholemeal pita pockets
- 5milliliter extra virgin olive oil cooking spray
- 1/2 cup Woolworths light ricotta
- 2tablespoons chopped continental parsley
- 2 spring onions, finely chopped
- 1/3 cup Macro Organic no-added-salt diced tomatoes
- 150grams Kent pumpkin, coarsely grated
- 1 carrot, coarsely grated
- 1/3 cup Woolworths light tasty grated cheese
- 420grams Woolworths no-added-salt chickpeas, rinsed, drained
- 2teaspoons tahini
- 1/2teaspoons mild curry powder
- 60grams baby rocket leaves
- 2 sticks celery sticks, cut into 5cm lengths
- 2 Woolworths mini apples

Description
Embrace the flavours of Italy with this lunch box, which features a tasty pint-sized pizza, hummus, veggies and fresh fruit.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Place bread on tray. Spray with oil. Bake for 5 minutes or until lightly toasted.
Step 2 of 4
Combine ricotta, parsley and onion in a medium bowl. Spread bread with canned tomato. Dollop ricotta mixture over tomato, then top with pumpkin, carrot and cheese. Bake for a further 12-15 minutes or until golden-brown and vegetables are tender. Cool. Cut in half.
Step 3 of 4
Meanwhile, process chickpeas, tahini, curry powder and ¼ cup warm water until smooth.
Step 4 of 4
Top pizza with rocket. Serve in lunch boxes with chickpea mixture, celery and apple.
