  • 350grams frozen spinach portions, thawed
  • 4 capsicums
  • 1tablespoons olive oil
  • 1 1/2 cup light tasty cheese, shredded
  • 250grams rice & quinoa
  • 250grams pulled beef

Method

Step 1 of 3

Preheat oven to 180°C. Halve capsicums from top to bottom. Remove seeds and trim membranes. Place into a shallow baking dish. Drizzle with oil and season to taste.

Step 2 of 3

Combine rice and quinoa, meat and spinach in a bowl. Add 1 cup of the cheese and stir well to combine.

Step 3 of 3

Fill capsicums with mixture. Top with remaining cheese. Bake for 30 minutes until golden.
