8 Ingredients

  • 1kilograms cherries, pitted
  • 12 black peppercorns
  • 9 whole cloves
  • 3 star anise
  • 2 cinnamon sticks
  • 3 dried bay leaves
  • 2 cups Woolworths white wine vinegar
  • 1/2 cup white sugar

Method

Step 1 of 2

Divide cherries, spices and bay leaves between 3 x 500ml jars.

Step 2 of 2

Place vinegar, sugar, 1 cup water and 2 tbs salt in a small saucepan over medium heat. Bring to the boil, stirring to dissolve sugar. Carefully pour into jars to completely cover cherries. Seal and refrigerate for at least 4 hours or overnight. Serve with roast meats or on a cheese board.
