  • 4 yellow peaches, destoned
  • 1 cup caster sugar
  • 1 1/2 cup raspberries
  • 3 lemons, juiced (see tip)

  • ice cubes
  • 2L chilled sparkling mineral water

Description

Elevate your summary spread with this adults-only peach cocktail that's as fruity as it is fabulous.

Method

Step 1 of 3

Thinly slice 3 peaches. Combine sugar and 1 cup water in a medium saucepan over medium heat. Stir for 5 minutes or until sugar dissolves and mixture comes to the boil. Add three-quarters of the peach and 1 cup raspberries and cook for a further 10 minutes or until fruit is soft. Transfer to a blender and blend until smooth. Cool.

Step 2 of 3

Strain mixture and discard solids. Add lemon juice and rum to purée.

Step 3 of 3

Add ice and remaining peach slices to 8 serving glasses or a large jug. Add 1/4 cup purée to each glass and top with mineral water. Cut remaining peach into wedges. Thread peach wedges and remaining raspberries onto cocktail skewers. Arrange a skewer on top of each glass. Serve.
