Blueberry Lemonade With Gin

- 240milliliter gin
- 3 lemon, 1/2 cup juiced and strained
- 375grams blueberries
- 750milliliter lemonade, chilled
- 1 1/2 cup caster sugar
Method
Step 1 of 3
Chill 8 cocktail glasses. Place sugar, blueberries and 1 1/2 cups water in a medium saucepan over medium heat. Stir until sugar dissolves and mixture comes to the boil. Reduce heat to low and simmer for 5 minutes or until blueberries soften.
Step 2 of 3
Strain mixture into a bowl, pressing gently with a spoon to extract as much liquid as possible. Discard pulp. Add lemon juice to syrup, cover and refrigerate for 2 hours or until cold.
Step 3 of 3
Pour 30ml gin into each cocktail glass. Add 1 1/2 tbs blueberry syrup into each glass and mix. Top each glass with lemonade. Serve with extra blueberries.
