  • 1 lime, juiced and rind finely grated
  • 600milliliter coconut water
  • 750milliliter prosecco, chilled (see tip)

Description

Try our fun mango floats. Ride the balance of fizzy and creamy with the sweet taste of mango. Feel refreshed with a drink the whole family will love. Enjoy!

Method

Step 1 of 4

Combine sugar and coconut water.

Step 2 of 4

Put coconut water mixture in a small saucepan. Stir over medium-high heat until sugar dissolves and mixture comes to the boil. Reduce heat to low. Simmer for 10 minutes or until mixture thickens. Set aside to cool for 15 minutes, then refrigerate for 30 minutes.

Step 3 of 4

Meanwhile, cut cheeks from mangoes. Scoop flesh into a blender. Trim remaining flesh from around the stones and add to blender. Add lime rind and juice and 1 cup coconut syrup. Blend until smooth. Add remaining syrup and blend until combined. Pour mixture into a 22 x 12cm loaf pan. Cover with plastic wrap and freeze overnight.

Step 4 of 4

To serve, scoop mango sorbet into glasses. Top with chilled prosecco.
