    • 6 mint leaves
    • 1 passionfruit
    • 1/2 cup V8 Pineapple Passion Juice
    • 40milliliter coconut rum
    • 1/2 cup soda water
    • 1 cup ice cubes
    • 1/4 pineapple, cut into wedges (to garnish)
    • 1 leaf mint (to garnish)

    Method

    Step 1 of 6

    Place lime and mint in a glass.

    Step 2 of 6

    Using a muddler, crush up lime and mint.

    Step 3 of 6

    Add passionfruit, rum and V8 juice.

    Step 4 of 6

    Add ice and stir.

    Step 5 of 6

    Top with soda and garnish with pineapple wedge and mint.
