- 2 cup pineapple juice
- 1/2 cup malibu
- 4 slice ginger
- 1/2 fresh pineapple
- 2 limes
- 6 kaffir lime leaves
- 1/2 cup caster sugar
- 750milliliter soda water
- 3 cup coconut water
Method
Step 1 of 3
Trim 1/2 fresh pineapple, cut into thin slices, then into small wedges. Place in a bowl and refrigerate until required.

Place 1 cup water, 1/2 cup caster sugar, 4 kaffir lime leaves and 4 thin slices ginger into a saucepan and stir over a medium heat until sugar dissolves and mixture comes to the boil. Simmer for 2 minutes, then remove from heat. Stand for 20 minutes to allow flavours to infuse.

Strain through a fine sieve and discard solids. Chill. Combine sugar syrup, 3 cups coconut water, 2 cups pineapple juice, juice of 2 limes, 1/2 cup Malibu, 2 kaffir lime leaves and pineapple wedges (reserving some for garnish) in a large bowl and stir until combined. Pour into tall jugs with 4 cups ice. Add 750ml soda water and stir until combined. Fill glasses with cocktail, garnish with a pineapple wedge on the side and serve immediately.
