Panna Cotta with Fresh Fruit Salad

- 1tablespoons sunflower oil
- 1 2/3 cup single cream
- 1 cup whole milk
- 100grams caster sugar
- 4 sheets gelatine
- 200grams fruit salad (to serve)
Description
This simple Italian dessert makes a refreshing end to a meal, served with a fruit compote or fresh fruit salad.
Method
Step 1 of 4
Heat the cream and milk in a saucepan. When it is hot, but not boiling, pour it into a bowl and whisk in the sugar until dissolved.

Meanwhile, soak the gelatine in a bowl of water for 5 minutes, squeeze out the excess and add to the hot cream. Heat it very gently, stirring, until the gelatine dissolves.

Rub the insides of four 150ml ramekins with a piece of kitchen paper dipped in the oil. Divide the cream mixture between the ramekins, cover, and cool. Transfer to the fridge for at least 2 hours, or until the cream has set.
Step 4 of 4
To serve, fill a bowl with hot water and carefully dip the base of each ramekin into the water. Run a small knife around the edge of each ramekin, and turn the pannacottas out onto plates. Garnish with fruit compote, fruit coulis, or a fruit salad.
