Method

Step 1 of 3

Trim bases of sprouts and halve lengthways.

Step 2 of 3

Blanch in boiling water for 3-4 minutes or until just starting to soften. Drain and refresh in cold water to stop them cooking further.

Step 3 of 3

Heat oil in a frying pan over medium-high heat. Add garlic, bacon and pine nuts and cook for a few minutes until crisp and golden. Add sprouts and cook, tossing, for 2-3 minutes or until lightly browned.
