- 3tablespoons olive oil
- 4 lamb shanks
- 2 onions, peeled and sliced
- 6 cloves garlic, peeled and sliced
- 2tablespoons ras el hanout
- 800grams chopped tomatoes
- 1L chicken stock, made with 2 stock cubes
- 70grams prunes, sliced
- 1tablespoons honey
Description
Gentle Moroccan spice works perfectly with tender lamb shanks. Serve with herby couscous for a real middle eastern feast.
Method
Step 1 of 3
Heat the oil in a large pan and seal each shank on all sides, cooking for 4-5 minutes until browned. Place the shanks in the slow cooker and add the onions, garlic and ras el hanout and stir well.
Step 2 of 3
Pour the chopped tomatoes and stock into the slow cooker, add prunes and honey and cook on low for 8 hours.
Step 3 of 3
Remove the shanks from the slow cooker, wrap in foil and pour the remaining liquid into a large saucepan on medium high heat. Cook down until reduced and glossy, this should take 12-15 minutes. Serve with the lamb shanks.
