- 175grams butter, at room temperature
- 175grams caster sugar
- 3 large eggs, lightly beaten
- 1teaspoons baking powder
- 1teaspoons ground cinnamon
- 1teaspoons ground ginger
- 178grams thick-cut Seville orange marmalade (save 28g to brush)

Method
Step 1 of 2
Preheat the oven to 180°C. Line the base and sides of a loaf tin with baking parchment. Sift the flour into a large bowl, add the butter, sugar, eggs, baking powder, spices, and marmalade, and mix with an electric hand whisk until well combined.

Pour into the tin and smooth the top. Bake for 1 1 / 4 hours, or until risen and firm to the touch. Cover the top of the cake with foil for the last 30 minutes if it starts to brown too quickly. Leave to cool in the tin for 5 minutes. Warm the marmalade in a pan, then brush the top of the cake generously with it. Remove from the tin, and leave to cool completely on a wire rack.
