- 2tablespoons capers, drained on paper towel, chopped
- 2 cloves garlic, crushed
- 1/4 bunch continental parsley, leaves picked, chopped
- 500grams fresh potato gnocchi
- 500grams thawed marinara mix
- 400grams can diced tomatoes
- 1/2 cup sliced black olives, drained
- 60grams baby rocket
- 2tablespoons balsamic dressing
- 1/4 cup extra virgin olive oil

Description
This hearty Italian dish won't hurt the wallet and is easy to make. Combine fresh potato gnocchi with a juicy tomato-based marinara sauce for a deliciously simple weeknight meal.
Method
Step 1 of 4
Zest lemon, then cut into wedges. Heat half the oil in a large non-stick frying pan over medium heat. Add capers and cook for 1 minute or until golden and crispy. Transfer to a heatproof bowl. Cool slightly. Add lemon zest, garlic and parsley. Mix well.
Step 2 of 4
Add remaining oil to frying pan and return to medium heat. Add gnocchi and cook, turning frequently, until golden. Place gnocchi in a heatproof bowl.
Step 3 of 4
Add marinara mix to pan. Cook in batches for 2 minutes, or until browned and almost cooked through. Place marinara mix in a heatproof bowl.
Step 4 of 4
Add tomato to pan and bring to a simmer. Return marinara mix and gnocchi to pan. Add olives. Cook, stirring occasionally, for 3 minutes or until heated through. Place rocket in a bowl with dressing. Toss to combine. Spoon marinara gnocchi into serving bowls. Top with fried caper gremolata. Serve with rocket salad and lemon wedges.
