  • 1 1/2 cup jasmine rice
  • 2tablespoons vegetable oil
  • 500grams lean beef mince
  • 2 cloves garlic (crushed)
  • 1/2 bunch spring onions (thinly sliced, white and green parts separated)
  • 1/3 cup XO sauce
  • 1 long red chilli (thinly sliced)
  • 1 cup salt-reduced chicken stock
  • 1tablespoons Chinese cooking wine
  • 1tablespoons soy sauce
  • 1tablespoons brown sugar
  • 1teaspoons cornflour
  • 450grams firm tofu (cubed into 2cm pieces)
  • 2 cup frozen sliced beans

Description

Discover our mapu tofu recipe, a traditional Chinese dish that fuses minced beef with tofu and veggies, tossed in a fragrant spiced sauce. Enjoy today.

Method

Step 1 of 4

Place 2 1/2 cups water in a large saucepan and bring to the boil over high heat. Add rice, reduce heat to low, then cover and cook for 10 minutes or until rice is just tender. Remove pan from heat.

Step 2 of 4

Meanwhile, heat oil in a wok over high heat. Add mince and cook, breaking up with a spoon, for 5 minutes or until browned.

Step 3 of 4

Add garlic, white part of onion, XO sauce and half the chilli, then stir-fry for 1 minute or until fragrant. Whisk stock, wine, soy sauce, sugar and cornflour together in a bowl. Add to wok and bring to the boil. Reduce heat to medium-low and simmer for 7 minutes or until sauce thickens slightly.

Step 4 of 4

Add tofu and beans, then stir-fry for 2 minutes or until warmed through. Divide rice among bowls, and top with mapo tofu, and remaining chilli and green part of onion. Serve.
