For the glaze
- 115grams good-quality dark chocolate, 70% cocoa, chopped
- 1/3 cup maple syrup
- 175grams unsalted butter
- 1/2 cup single cream (to serve)
- 115grams plain flour
- 250grams good-quality dark chocolate, 70% cocoa, chopped
- 1 1/3 cup maple syrup
- 6 eggs, 2 whole egg, 4 egg yolks
- 1teaspoons sea salt flakes
- 2tablespoons granulated maple sugar, to decorate

Preheat the oven to 220°C . Grease the molds and dust lightly with flour. Melt the chocolate and butter in a heatproof bowl over a small saucepan of gently simmering water. Do not allow the base of the bowl to touch the water. Stir the mixture gently until smooth.

Remove the saucepan from the heat, remove the bowl from the bain-marie, and add the maple syrup to the chocolate mixture. Stir until combined. Beat in the eggs and egg yolks until smooth. Stir in the flour and salt.

Divide the batter evenly between the molds, filling them approximately three-quarters full. Place them on a baking sheet, and bake for 12-13 minutes until the cakes are cooked with a still-liquid centre.

Meanwhile, for the glaze, melt the chocolate with the maple syrup in a heat proof bowl over a small saucepan of gently simmering water. Do not allow the base of the bowl to touch the water. If the sauce is too thick to pour, add 1-2 teaspoons warm water to the mixture.

Turn the baked puddings out onto individual plates. Serve immediately with the glaze drizzled over the top, with single cream, vanilla ice cream, or crème fraîche. Sprinkle with maple sugar, if desired.
