  • 500grams limes
  • 4 cups caster sugar

Description

Whether you're giving it as a gift or indulging in it at breakfast, this lime marmalade is a tangy and delicious treat.

Method

Step 1 of 3

Cut and discard lime ends. Quarter limes lengthways, then thinkly slice crossways into 2mm-thick slices. Place in a large bowl and cover with cold water. Cover and refrigerate overnight.

Step 2 of 3

Drain lime and place in a large saucepan with 1L water. Bring to the boil over medium-high heat. Reduce heat to low and simmer, uncovered, for 1 hour or until rind is tender.

Step 3 of 3

Add sugar and cook, stirring, for 10 minutes or until sugar has dissolved. Increase heat to medium. Bring to the boil. Boil, stirring often, for 40 minutes or until marmalade reaches setting point when tested. Use a metal spoon to skim any foam from top of marmalade. Carefully pour hot marmalade into sterilised jars. Seal with lid and cool.
