  • 85grams frozen broad beans
  • 1tablespoons white wine vinegar
  • 1 piece of fresh root ginger, of 5 cm, peeled and grated
  • 1 caster sugar
  • 400grams lentils, drained and rinsed
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 bunch spring onions, finely chopped
  • 1 fresh green chilli, deseeded and finely chopped
  • 175grams feta cheese, cut into cubes
  • 1 handful fresh flat-leaf parsley, finely chopped
  • 3tablespoons olive oil

Method

Step 1 of 3

Soak the broad beans in boiling water for 5 minutes, then drain.

Step 2 of 3

Put the lentils in a serving bowl, and season with a pinch of salt and some black pepper. Add the spring onions, chilli, and drained broad beans, and stir well.

Step 3 of 3

To make the dressing, put the oil, vinegar, and ginger in a jug or small bowl. Season with salt and pepper, and a pinch of sugar (if using), and whisk until well combined. Drizzle over the salad and leave to stand for 10 minutes, to allow the flavours to develop. When ready to serve, stir through the feta and parsley.
