  • 1 handful fresh lettuce leaves
  • 1teaspoons cumin seeds, crushed
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1-2tablespoons pomegranate syrup
  • 2teaspoons sumac
  • 2-3 tomatoes, skinned and sliced
  • 1 capsicum, deseeded and chopped
  • 4-5 spring onions, trimmed and sliced
  • 1 small bunch flat-leaf parsley, coarsely chopped
  • 2 pitta breads
  • 2-3tablespoons olive oil
  • 1 lemon, juice only
  • 1-2 cloves garlic, crushed

Method

Step 1 of 2

Arrange the lettuce leaves, tomatoes, capsicums, and spring onions in a wide, shallow bowl and sprinkle the parsley over the top. Lightly toast the flatbreads, break them into bite-sized pieces, and scatter them over the salad.

Step 2 of 2

In a small bowl, combine the oil and lemon juice with the garlic and cumin seeds. Season well and pour over the salad. Drizzle the pomegranate syrup over the top and sprinkle with sumac. Toss the salad gently just before serving.
