  • 1 1/4 cup double cream
  • 1 lime, finely grated zest, for garnish
  • 1 lemon, juice only
  • 1 lemon, finely grated zest (to decorate)
  • 1tablespoons gin

Method

Step 1 of 2

Mix the lemon juice and lime juice in a bowl, add the gin or vodka and sugar, and stir until the sugar starts to dissolve. Pour in the cream and whisk with a balloon whisk until the mixture forms soft peaks.

Step 2 of 2

Spoon into 4 serving glasses, then chill in the refrigerator for 30 minutes. Decorate with lemon zest and lime zest (if using), and serve with small thin biscuits or little shortbread rounds.
