  • 3/4 cup lemon juice
  • 1/4 cup lime juice

Method

Step 1 of 2

Whisk yolks and sugar in a medium saucepan and place over medium low heat. Add lemon and lime juice and stir constantly for 15-20 minutes or until mixture thickens and coats the back of a spoon (like a custard).

Step 2 of 2

Remove saucepan from heat and add butter, a little at a time, stirring until melted and well-combined. Transfer to a bowl, cover and refrigerate for 2-3 hours or until thick and set. Transfer to sterilised jars if not using immediately. Perfect for pie and tart fillings, or as a spread for scones and pikelets.
