- 200grams cocktail truss tomatoes, separated

- 1 sourdough loaf, sliced

Wondering how to cook lamb chops? This easy Mediterranean-inspired lamb chop recipe combines tomatoes, olives and feta in one tray.
Method
Step 1 of 4
Zest and juice 1 lemon. Pick leaves from half of the oregano and finely chop. Combine zest, juice, 2 tbs oil and chopped oregano into a bowl. Season with pepper. Add chops and turn to coat. Set aside to marinate for 10 minutes.

Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with sides with baking paper.

Heat a large frying pan over high heat. Drain chops, reserving marinade. Cook lamb for 2 minutes each side or until golden. Transfer lamb to tray. Add tomatoes and drizzle with reserved marinade. Roast for 10 minutes or until tomatoes begin to blister. Add olives and feta. Roast for a further 2 minutes or until warmed through. Cover loosely with foil. Rest for 3 minutes.
Step 4 of 4
Pick sprigs from remaining oregano. Cut the remaining lemon into wedges. Scatter oregano sprigs over lamb. Serve with lemon wedges and bread.
