  • 40grams panko bread crumbs
  • 4tablespoons parsley, fresh, chopped

Description

Making veggie meatballs with meat-free mince means you can control the flavours and add your favourite herbs and spices.

Method

Step 1 of 4

Heat half of the oil in a large pan on medium high heat and cook the onion for 5 minutes to soften. Add the garlic and half of the oregano and cook for 1 minute. Pour over the chopped tomatoes, bring to the boil, reduce the heat and simmer for 10 minutes.

Step 2 of 4

Mix the mince, eggs, breadcrumbs, oregano, half of the parsley and lemon zest together in a large bowl. Roll into balls with your hands.

Step 3 of 4

Heat the rest of the oil in a large pan on medium high heat and cook the meatballs for 5 minutes to brown all over. Add the meatballs to the sauce and simmer for 5 minutes.

Step 4 of 4

Serve the meatballs with chopped parsley on top and crusty bread on the side, if desired.
