  • 500grams Woolworths COOK beef rump mini roast with mustard & herbs
  • 2 cloves garlic, crushed
  • 450grams microwave brown rice
  • 1 1/2 cups salt-reduced chicken stock
  • 1 red onion, cut into wedges
  • 1/3 cup pitted Sicilian green olives
  • 3 stalks kale, roughly chopped
  • 250grams cocktail truss tomatoes
  • 3/4 cup light Greek yoghurt
  • 1/4 bunch mint, leaves picked, roughly chopped

Description

You'll love this traybake. With roast beef, brown rice, sweet truss tomatoes and olives, this tasty traybake recipe is a true dinner winner.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Rub beef with two-thirds of the garlic.

Step 2 of 4

Place rice, stock, onion and olives in a medium baking dish and stir to combine. Season with pepper. Top with beef and bake for 25 minutes or until beef has browned.

Step 3 of 4

Place kale and tomatoes around beef. Bake for 25 minutes for medium or until beef is cooked to your liking. Cover with foil and rest for 5 minutes. Thinly slice beef.

Step 4 of 4

Meanwhile, combine yoghurt, mint and remaining garlic in a small bowl. Season with pepper. Serve beef and rice traybake with mint yoghurt.
