- 1 red onion
- 2tablespoons red wine vinegar
- 200grams lean beef mince
- 425grams no-added-salt brown lentils, rinsed, drained
- 2 cloves garlic
- 1teaspoons ground allspice
- 2 large wholemeal Lebanese bread rounds
- 1/4 cup no-added-salt tomato paste
- 1 cup shredded light tasty cheese
- 60grams baby rocket leaves
- 2 large vine-ripened tomatoes
- 1/3 bunch continental parsley, leaves picked
- 1 long green chilli, sliced
- 1teaspoons smoked paprika
- 5milliliter extra virgin olive oil cooking spray

Description
Loaded with aromatic flavours and crunch, this nutritious Lebanese-style pizza with beef mince, red onion, tomato and tasty cheese won't disappoint.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Grease and line 2 baking trays with baking paper. Using a mandolin, slice onion into thin rounds. Place in a glass bowl. Add vinegar and set aside.
Step 2 of 4
Spray beef with oil. Heat a large non-stick frying pan over medium-high heat. Add beef and cook, stirring to break up any lumps, for 3 minutes or until browned. Add lentils, garlic and allspice and cook, stirring, for 1 minute or until heated and fragrant. Remove from heat.
Step 3 of 4
Place bread on prepared trays. Spray with oil, then spread with tomato paste and sprinkle with half of the cheese. Bake for 7 minutes or until cheese begins to melt. Top bread with beef mixture, then remaining cheese. Bake for a further 7 minutes or until bread is crisp and cheese is golden-brown. Remove from oven. Transfer to a chopping board.
Step 4 of 4
Finely chop tomatoes. Drain onion and discard liquid. Top pizzas with rocket, tomato, onion, parsley and chilli. Serve sprinkled
with paprika and freshly ground black pepper.
