Preheat oven to 180ºC. Lightly spray a 6-hole medium muffin tray with oil.
Step 2 of 2
Place 2 slices of ham into each muffin hole. Divide spinach leaves between muffin holes, then break an egg into each. Bake for 15 minutes or until eggs are set and cooked to your liking. Serve tarts warm or cold.
