  • 2tablespoons Woolworths extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1 celery stalk, thinly sliced
  • 2 rosemary sprigs, leaves picked, finely chopped
  • 2 zucchini, cut into 1cm pieces
  • 1 leek, trimmed, thinly sliced
  • 840grams Woolworths no-added-salt cannellini beans, rinsed, drained
  • 2 cups salt-reduced vegetable stock
  • 1 1/2 cups wagon wheels pasta
  • 2 bunches asparagus, trimmed, cut diagonally into thirds
  • 2/3 cup frozen peas
  • 1/4 bunch continental parsley leaves, leaves picked, finely chopped

Description

Warm up with a quick and easy minestrone soup. Our fresh twist on this comforting classic is loaded with green veggies and is nutritionally approved.
Instruction tip
Tip:
Instead of discarding celery leaves, roughly chop them and add to your soup with the asparagus and peas.

Method

Step 1 of 3

Heat oil in a large, deep saucepan over medium heat. Cook onion and celery, stirring, for 4 minutes or until softened, but not coloured. Add rosemary and cook, stirring, for 1 minute or until fragrant.

Step 2 of 3

Add zucchini, leek, beans, stock and 6 cups water. Bring to the boil over high heat. Add pasta. Reduce heat to medium and simmer, uncovered, for 10 minutes or until pasta is tender.

Step 3 of 3

Stir in asparagus and peas, then cook for 1 minute or until tender. Serve topped with parsley.
