- 1 spring onion, cut into 5cm lengths and thinly sliced lengthways
- 300grams broccoli, roughly chopped
- 1 cup white quinoa, rinsed
- 1 1/2 cups frozen peas
- 150grams snow peas, trimmed, halved diagonally
- 2 lemons, 1 zested and juiced, 1 cut into wedges
- 1tablespoons Woolworths extra virgin olive oil
- 1tablespoons lemon pepper seasoning
- 600grams skinless ling fillets, deboned
Description
Looking for an easy healthier dinner? Try this light and tasty pan-fried lemon pepper fish with broccoli, green peas, snow peas and quinoa.
Method
Step 1 of 4
Place onion in a bowl of iced water. Set aside until ready to use. Place broccoli in a food processor and process until finely chopped.
Step 2 of 4
Cook quinoa in a large saucepan of boiling water, adding frozen peas and snow peas in the last 1 minute of cooking. Remove pan from heat. Stir in broccoli. Drain. Transfer to a large bowl. Stir in zest, lemon juice and half of the oil. Set aside.
Step 3 of 4
Meanwhile, heat remaining oil in a large frying pan over medium-high heat. Rub seasoning all over fish. Cook fish for 3 minutes on each side or until golden and cooked through.
Step 4 of 4
Drain onion. Divide quinoa mixture among plates. Top with fish and onion. Serve with lemon wedges.
