Caramel Sauce
  • 1/2 cup caster sugar
  • 50grams butter
  • 1/4 cup pure cream
  • 1 Royal Gala apple
  • 90grams butter, softened
  • 1/2 cup caster sugar
  • 1teaspoons vanilla extract
  • 4 free range eggs
  • 1 cup Macro organic coconut flour
  • 2teaspoons baking powder
  • 1 1/2 cup milk
  • 2tablespoons raw sugar

Description

After a fuss-free gluten-free dessert? This apple tea cake recipe includes a decadent drizzling of rich caramel sauce.

Method

Step 1 of 5

Preheat oven to 180°C/160°C fan-forced. Grease a 20cm (7cm deep) round cake pan and line base and side with baking paper.

Thinly slice 10 rounds from apple and reserve. Peel and grate remaining apple. Using an electric mixer, beat 80g butter, caster sugar and vanilla in a large bowl until pale and creamy. Beat in eggs, one at a time, until combined (mixture may curdle). Sift over flour and baking powder. Add milk, then beat on low until just combined. Stir in grated apple. Spoon mixture into pan and level top. Arrange apple slices on top. Heat remaining butter in a saucepan over medium heat for 2 minutes or until melted. Brush apple with butter and sprinkle with raw sugar.

Bake for 1 hour or until a skewer inserted into centre comes out clean. Stand in pan for 20 minutes, then transfer to a wire rack to cool.

Meanwhile, to make the caramel sauce, stir sugar and cup water in a saucepan over medium heat, without boiling, for 5 minutes or until sugar has dissolved. Increase heat to high and bring to the boil. Boil, without stirring, for 8 minutes or until golden. Remove pan from heat. Stir in butter, then cream. Set aside to cool.
