Method
Step 1 of 7
Preheat oven to 180°C.
Step 2 of 7
Cut through ham rind leaving 8cm on the shank. Run your thumb underneath rind to separate from fat. Peel back and remove rind.

Score fat into diamond shapes. Place ham into a large roasting pan and bake for 30 minutes.

Meanwhile, cut rind from oranges and remove the white pith. Cut the peel into 1cm wide strips.
Step 5 of 7
Place 2 cups water and white sugar into a small saucepan. Stir over medium heat until sugar has dissolved.
Step 6 of 7
Boil for 5 minutes until thickened slightly. Add peel to syrup and simmer for 5 minutes until tender. Stir syrup until it crystallises.
Step 7 of 7
Spread over the ham and return to the oven for 30 minutes until crisp and set.
