Glazed Leg Ham with Spiced Apricots

- 20grams butter
- 30 cloves
- 2teaspoons ground ginger
- 1 cup orange marmalade
- 8kilograms Whole leg ham
- 2tablespoons brown sugar
- 820grams can apricot halves infruit juice, drained

Method
Step 1 of 4
Preheat oven to 160°C. Cut rind around the shank. Slide your fingers under the edge of the rind to loosen. Pull gently to remove. Using a small knife score the fat in a diamond pattern but don’t cut into the meat.

Warm the marmalade in a small saucepan or microwave. Line the base of a large baking dish with baking paper. Place the ham into the dish and decorate with cloves. Brush with marmalade. Bake for about 1 hour or until glaze is golden.

Heat a non-stick frying pan over medium-high heat. Add butter and ginger and when butter has melted, add apricots. Toss over heat until edges are beginning to brown. Stir in brown sugar and cook for 2 minutes until apricots are glazed. Transfer to a serving bowl.
Step 4 of 4
Thinly slice ham and serve with the spiced apricots.
