  • 1/4 cup olive oil
  • 1 bunch fresh oregano

Method

Step 1 of 3

Preheat oven to 180°C. Line a large baking tray with baking paper. Using a small sharp knife, cut deep slices every 3mm across potatoes, taking care not to cut right through.

Step 2 of 3

Brush potatoes with oil to coat and push garlic slices into cuts. Transfer to tray, cut sides up, and season. Bake for 40 minutes.

Step 3 of 3

Remove potatoes from oven and cool slightly. Gently squeeze potatoes to open out the cuts and insert oregano sprigs. Return to oven and bake for a further 20 minutes or until golden. Serve.
