  • 5milliliter extra virgin olive oil cooking spray
  • 450grams microwave brown rice
  • 1 large carrot, grated
  • 1 clove garlic, crushed
  • 3centimeters ginger, grated
  • 1tablespoons Woolworths sweet chilli sauce
  • 2 spring onions, finely chopped
  • 12 leaves baby cos lettuce, ends trimmed
  • 1 Lebanese cucumber, finely chopped
  • 1/4 bunch coriander, leaves picked
  • 1 lime, cut into wedges

Method

Step 1 of 3

Spray chicken with oil. Heat a large non-stick frying pan over medium-high heat. Add chicken and cook, stirring to break up any lumps, for 3 minutes or until browned.

Step 2 of 3

Add rice, carrot, garlic and ginger to chicken and cook, stirring, for 3 minutes or until chicken is cooked through. Remove from heat. Add sweet chilli and onion.

Step 3 of 3

Place lettuce on plates. Top with chicken mixture and cucumber. Sprinkle with coriander. Serve with lime wedges.
