- 375grams dried orzo
- 1tablespoons butter
- 1tablespoons olive oil
- 1 red chilli, deseeded and finely chopped
- 2 cloves garlic, finely chopped
- 4 spring onions, very finely chopped
- 3 medium zucchini, coarsely grated
- 1 small lemon, finely grated zest
- 150grams soft cheese with garlic and herbs
- 4tablespoons flat leaf parsley, finely chopped
- 1 pinch salt
- 1 pinch pepper

Method
Step 1 of 4
Bring a large pan of lightly salted water to the boil, then cook the pasta according to the packet instructions.
Step 2 of 4
Meanwhile, heat the butter and olive oil in a large frying pan, then add the chilli, garlic, spring onions and zucchini. Cook over a medium-low heat for 10-15 minutes, or until softened, stirring often.
Step 3 of 4
Reduce the heat and add the lemon zest. Cook gently for 3-4 minutes, add the soft cheese and mix thoroughly. Season to taste.
Step 4 of 4
Drain the pasta and add to the zucchini mixture. Stir in the parsley, mix well and serve immediately.
