Creamy Tomato Mascarpone Pasta

- 1.50kilograms tomatoes, diced,ripened
- 6 cloves fresh garlic, chopped or minced
- 1tablespoons dried italian herbs
- 1teaspoons sugar
- 250grams mascarpone
- 1 handful fresh basil, chopped or torn
- 300grams large pasta spirals
Description
Select nice ripe red tomatoes. The ones still on the vine are ideal.
Instruction tip
If you have time reduce the heat to low and leave the tomatoes to cook for much longer to intensify the flavour
Method
Step 1 of 5
Bring a pot of water to the boil and cook the pasta spirals until al dente using the packet instructions. Then drain and set aside.

While the pasta is cooking, in a non-stick pan add all of the diced tomatoes, Italian herbs and chopped garlic and bring to the boil and then reduce heat and cook over a medium heat for about 10 minutes, stirring occasionally. You can cook this for much longer if you have time, as this will intensify the flavours, but if not 10 minutes will do.

Stir in the sugar and basil and continue cooking for a couple of minutes.
Step 4 of 5
Stir in all of the mascarpone and mix well while still over the heat for about 2 minutes.
Step 5 of 5
Add the pasta to the sauce in the pan. Mix to coat all the pasta. Remove from heat and serve.
