  • food colours (assorted)
  • 2tablespoons icing sugar (to dust)
  • 600grams ready-to-roll white icing
  • 1034grams gluten free cake mix (2 packets)
  • 454grams vanilla frosting

Method

Step 1 of 10

Preheat oven to 180°C. Grease and line 2 round cake tins (18cm and 24cm).

Step 2 of 10

Prepare cake mix following packet instructions. Pour 1 3/4 cups of the batter into the small cake tin. Pour remaining cake batter into the large tin. Bake both cakes for 30 minutes or until cooked when tested with a skewer. Cool in tin for 10 minutes before turning out onto a wire rack.

Step 3 of 10

Repeat with 2nd cake mix. Cool cakes completely. Level all 4 cakes.

Step 4 of 10

Join 2 cakes together with frosting in middle. Cover top and side with a thin layer of frosting. Repeat with smaller cakes. Chill.

Meanwhile, dust a clean surface with icing sugar and knead icing until smooth. Divide in half, wrap 1 portion tightly in plastic and set aside.

Roll remaining portion out until 3mm thick. Cut out a circle large enough to cover top of small cake (reserve scraps) and smooth over cake.

Step 7 of 10

Add drops of blue food colour to remaining icing to make pale-blue icing. Roll out and cut circle to cover top of large cake. Smooth icing over large cake. Position small cake on top of large one, slightly towards back of cake. Place onto a large round cake board.

Roll out 2nd portion of icing and make 1 strip 5cm wide and 20cm long. Using the tip of a small knife, cut along one edge in a wavy manner. Press strip around side of small cake.

Step 9 of 10

Repeat strips with icing, adding more colour for each and making them long enoug to wrap around the cakes to make 3 more waves (2 blue and 1 green).

Step 10 of 10

Use icing scraps and colour to make stars, coral and fish. Arrange on cake.
