Chicken wontons
  • 500grams lean chicken mince
  • 3 spring onions, thinly sliced
  • 1 clove garlic, crushed
  • 1 long red chilli, seeded, finely chopped
  • 200grams wonton wrappers
  • 1.50L salt-reduced chicken stock
  • 2 carrots, sliced
  • 1/4 cup salt-reduced soy sauce
  • 12 banana prawns, peeled, leaving tails intact
  • 1 bunch pak choy, halved lengthways
  • 200grams dried vermicelli noodles
  • 2 spring onions, thinly sliced

Description

Spoil loved ones with this moreish combination wonton soup packed with flavour.

Method

Step 1 of 4

To make chicken wontons, combine mince, onion, garlic and half of the chilli in a bowl. Place 1 rounded tsp of the mixture in the centre of 1 wonton wrapper. Brush a little water around the edge with your finger. Fold corners together to form a pouch and pinch to secure. Place on a plate and repeat to make 20 wontons in total.

Step 2 of 4

Place stock, carrot and 1L water in a large saucepan over high heat. Bring to a boil. Reduce heat to medium. Simmer for 5 minutes or until carrot is tender. Add soy sauce, wontons and prawns. Simmer for 5 minutes or until wontons are cooked through and have risen to the top. Add pak choy. Remove from heat.

Step 3 of 4

Meanwhile, cook noodles in a saucepan of boiling water for 2 minutes or until tender. Drain.

Step 4 of 4

Divide noodles among bowls and ladle over soup mixture. Top with onion and chilli. Serve.
