  • 1/3 cup bourbon or cognac
  • 300milliliter thickened cream
  • 3 cup milk
  • 1teaspoons ground nutmeg (to serve)
  • 1teaspoons vanilla bean paste
  • 6 eggs
  • 1 cup caster sugar
  • 1/3 cup dark rum
  • 1/4teaspoons salt

Method

Step 1 of 4

Separate 6 egg yolks and combine together with, 1/2 cup sugar, vanilla bean paste and salt in a large heatproof bowl over a saucepan of gently simmering water. Whisk constantly for 5 minutes, or until mixture is pale and thick. Whisk in milk, bourbon and rum, then remove from heat.

Step 2 of 4

Beat egg whites and remaining 1/2 cup sugar in the bowl of an electric mixer until soft peaks form. Gradually pour in the warm custard mixture, whisking to combine.

Step 3 of 4

In a clean bowl, beat cream until soft peaks form. Whisk into eggnog mixture. Refrigerate eggnog for up to 1 day.

Step 4 of 4

Whisk eggnog again just before serving. Pour into glasses and sprinkle with ground nutmeg.
